Dehydrating Local Foods and Seasonings

Students will discuss benefits of dehydrated foods, easy preparation tips for fruit and vegetables, as well as learn to make their own seasonings from vegetables and herbs that are available locally.  Students will sample a variety of freshly dehydrated fruits and vegetables.  Seasonings will be available to sample, as well.  We will talk about how to use dehydrated foods in every day dishes.  Different types of dehydrators will be on display.

Healing Bone Broths For Nutrition

Delicious healing bone broths for flavor and nutrition.  Learn the essentials of making bone broths and reported health benefits of this amazing tonic.  From soups to snacks, bone broth is delicious, warming and a flavorful way to add nutrition to your family’s diet.  Students will sample a variety of broths.

Fermenting for Health and Flavor

Class Description:  Fermenting is the age-old way of preserving fresh food.  Plus, fermented foods are healthy and full of probiotics! Learn the health benefits and flavor of making tangy krauts, spicy kimchi, delicious fresh yogurt, and flavorful kombuchas.

The hands-on class demonstration will focus on ‘lactofermentation’, which is essentially the fermentation of vegetables using only fresh vegetables, fine mineral salt, and water.  Class participants will sample a variety of ferments and will take home a jar of fresh kraut made in the class.  As a bonus, each student will recieve a Ferment2Table Fermenting Kit to continue making delicious ferments at home!

Canning and Preserving The Safe Way

Learn to preserve your harvests of freshly picked fruits and vegetables the safe way, with all the deliciousness of Grandma’s kitchen!  This class will follow NCHFP (National Center for Home Food Preservation) guidelines for safe canning.  We will discuss water bath as well as Pressure Canning, and discuss safe practices to food handling.  We will make a ‘run’ of preserves, whatever is in season, in a water bath canner using delicious safe recipes and local ingredients.

Duration:  2 hours, student participation in hands-on food prep.
